Three ways to use Christmas dinner leftovers to rustle up more tasty festive dishes

OUR Christmas food waste bill is expected to hit an unpalatable £300million this year.

But instead of binning your leftovers, you can use them to rustle up more tasty festive dishes.

Here are some ways to get the most from your extra grub.

CHEAP AS CHIPS: These loaded fries have been trending on TikTok.

First, cook your fries as per instructions. Chop sausages and bacon and fry in a pan until cooked through, along with leftover stuffing.

When the fries are ready, spread them on the bottom of a serving dish, season and add some grated cheese.

Pile on your sausage and bacon mix and add cranberry sauce, plus more grated cheese. Drizzle with any leftover gravy.

GOUDA IDEA: Use bread, figs and feta from a cheeseboard to make this crostini recipe from drinks firm Discarded Spirits Co and sustainability advocate Elly Curshen (@ellypear on Instagram).

Finely chop three figs, add 50g sugar and two teaspoons of lemon juice, and leave to marinate. Cut a day-old baguette into slices, drizzle with olive oil and bake at 180C for 15 minutes.

Then, tip the figs into a pan on a medium heat. Add 25ml of vermouth, a rosemary sprig and 20ml of water. Bring to the boil and stir.

When the sugar is dissolved, simmer until it’s a thick jam. Remove the rosemary and let the mixture cool while whisking 125g of feta, 50g of Greek yoghurt and two tablespoons of olive oil.

Season, add the zest from half a lemon and chill before topping the crostini slices with feta mixture. Finish with jam.

SOUP-ER SNACK: Jamie Oliver recommends a soup to use up Brussels sprouts. Chop at least two handfuls and fry with an onion in a saucepan. Then add vegetable or chicken stock and boil until soft. Add a couple of dessert spoons of chestnut puree then liquidise.

Season and serve with a swirl of double cream.
